Build your own duck taco!

Responsibly raised Pekin duck is from Jurgielewicz Farm in PA. The preparation requires 48 hours notice because we take the time to butcher and clean the duck properly (using a paring knife to carefully remove the skin from the carcass, but keeping it intact). Then we steam it, chill it, and marinate it in shio koji, and allow it to dry 48 hours in the walk-in, resulting in crispier skin and juicier meat.
