Vegan ramen broths built from mushrooms, vegetables, and aromatic oils
Layering techniques that transform a simple broth into a soulful bowl
Chef Tracy will guide you through the ingredients, fermentation, and culinary chemistry behind each style of broth, helping you understand how Japanese traditions and PAGU’s modern approach intersect.
After the tasting, guests will build their own signature ramen, choosing from:
Multiple broths
Fresh noodles
Seasonal toppings and oils
